Variants:
White (Hakata) - From the birthplace of tonkotsu Hakata, Kyushu, Japan. A flavorsome Hakata Nagahama-style tonkotsu soup. Onion etc is added to pork extract and quickly cooked at high heat. Then white pepper, ground sesame and roasted sesame are added and it is finished with soy sauce.
Red (Kumamoto) - A rich garlic tonkotsu soup with garlic flavoring added to robust port extract. The seasoning oil is special ma-yu oil, garlic fried in lard and vegetable oil until black and then ground, a characteristic of Kumamoto ramen.
Black (Kagoshima) - With a fine Berkshire pig tonkotsu soup made using the bones of kurobuta from Kagoshima. Finished with a flavor that allows you to experience the fragrance and sweetness of vegetables. Contains scorched spring onions, a feature of Kagoshima ramen.
Pink (Kurume) - Onion, ginger, soy sauce etc. are added to a fragrant tonkotsu soup base, a feature of Kurume ramen, creating a sweet, rich tonkotsu soup that highlights the umami of pork and flavor of pork bone
Orange (Saga) - Beef Salt Ramen. The seasoning oil is a blend of beef tallow and sesame oil that further brings out the flavor of the soup.
Blue (Shoyu) - Pork, chicken, konbu, scallop, katsuoboshi and tuna are added to a flying fish base, creating a simple tasting soy sauce filled with flavors of the sea.
